What you will need
- 2 LBS Chicken wings, split and tips removed
- 1 TBSP Kosher salt
- 1 TSP Black pepper
- 1 TSP Garlic powder
- 1 TSP Onion powder
- 1 TBSP Cornstarch
- 1 TSP Baking powder (NOT baking soda)
- 1/2 CUP Tropical Sweet Heat sauce
- 1 TBSP Butter
- 1 TSP Fresh lime juice
- 1 TSP (optional for a stickier glaze) Honey
How you'll make it
-
Prep the Wings: Pat wings very dry with paper towels. In a large bowl, toss wings with salt, pepper, garlic powder, onion powder, cornstarch, and baking powder.
-
Refrigerate (Recommended): Arrange wings on a wire rack over a baking sheet and refrigerate uncovered for at least 2 hours or overnight.
-
Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
-
Bake the Wings: Arrange wings in a single layer. Bake for 20 minutes, then flip and bake for another 20–25 minutes until deep golden brown. Optional: Broil for 1–2 minutes for extra color.
-
Make the Wing Sauce: In a small saucepan over low heat, combine Harbo’s Tropical Sweet Heat, butter, lime juice, and honey. Warm gently, stirring until the butter has melted and the ingredients are fully combined into a smooth, glossy sauce. Do not boil.
-
Toss & Finish: Transfer hot wings to a bowl and toss with sauce.
-
Optional Glaze Step: Return sauced wings to the oven for 3–4 minutes to set the glaze. Serve immediately.
Using a wire rack is essential - it allows hot air to circulate under the wings so they don't get soggy.
